    At fifteen, Morrison crawled through a school theater ceiling to hang more lights. This Australian whisky old fashioned is that teenage audacity: smoky, amber-lit like a spotlight, with charcoal ice for the darkness above the stage and rosemary for the evergreen instinct to make the show better.

    Ingredients

    • 2 oz Australian whisky
    • 0.25 oz demerara syrup
    • 2 dashes aromatic bitters
    • Charcoal ice cube
    • Rosemary sprig
    • Orange peel

    Preparation

    1. 1.Stir whisky, demerara, and bitters with ice.
    2. 2.Strain over a charcoal ice cube.
    3. 3.Express orange peel over the glass.
    4. 4.Garnish with rosemary sprig.
