At fifteen, Iain Morrison climbed through the ceiling of a school theater in Brisbane to cut new rigging points and hang more lights. He wasn't trained. He wasn't authorized. He just thought the school dance could look bigger. This smoked lamb rib on charcoal captures that instinct: dark, theatrical, built from above, and finished with a gold wire because the best improvements are the ones nobody realizes were improvised.

Ingredients
- Lamb rack
- Charcoal crackers
- Rosemary oil
- Smoked salt
- Gold leaf wire
- Micro herbs
Preparation
- 1.Slow-roast lamb rack, slice into single-rib portions.
- 2.Brush with rosemary oil and finish with smoked salt.
- 3.Set each rib on a charcoal cracker.
- 4.Garnish with gold leaf wire and micro herbs.
