Twenty Suns
A petite saffron polenta sun with short crisp rays and a glossy pepper glaze — your Birmingham bet, glowing in one bite
In the supplied article, Hitchen says a struggling Birmingham solar show became the seed of twenty solar events worldwide. The growth figures are his account.
Why this bite? One troubled solar show became the seed of twenty. A golden sun with crisp rays, built from one promising start.
The Story
Where another buyer saw a loss, you saw something your team could fix. Greg's account of the Birmingham solar show begins with bad arithmetic and ends with twenty solar events. A petite saffron polenta sun, glazed with yellow pepper so it seems lit from within, carries short crisp rays tucked close around its edge — the whole sun no wider than any other piece on the tray. One bite, two chews. The glow is our interpretation of the story; the real tribute is the willingness to start with one imperfect event and make it worth returning to.
Ingredients
- 1/3 cup fine polenta
- 1 cup hot vegetable stock, plus extra if needed
- Small pinch saffron, plus threads to finish
- 2 tbsp finely grated vegetarian hard cheese made with microbial rennet
- 1 tsp butter
- 1 roasted yellow pepper
- 1 tsp lemon juice
- Salt
Preparation
- 1.Infuse saffron in hot stock. Whisk in polenta and cook, stirring, until thick and smooth, 4–5 minutes; add a splash of stock if it stiffens. Stir in butter and 1 tbsp cheese.
- 2.Spoon half the polenta into a 1/2-inch-deep tray and chill until firm; cut twelve discs 3/4 inch across. Spread the rest paper-thin on parchment and bake at 190°C for 15–20 minutes until deep golden and crisp; cut tiny 1/4-inch triangles for the rays.
- 3.Blend the pepper with lemon and a pinch of salt; reduce to a thick glossy purée. Top each disc with a small glossy dab and a few saffron threads.
- 4.Tuck three short crisp triangles upright around the edge of each sun so the rays stay within the disc's footprint — the complete piece stays under 1 inch across, one bite, two chews, matching the rest of the tray. Serve promptly so the rays stay crisp.
