The Madeira Cellar
A one-inch toasted brioche with Madeira-glazed fig and aged cheese — rich, warm, and after-dinner in spirit
Washington had a lifelong affinity for Madeira and often drank it after dinner.
Why this bite? Washington loved Madeira after dinner. This fig-and-cheese toast turns his cellar habit into a single luxurious mouthful.
The Story
Washington ordered Madeira by the pipe, asked specifically for rich, oily wine, and was remembered chatting after dinner with a glass of it in hand. Served alongside fruit and nuts, Madeira represented both hospitality and appetite at Mount Vernon. This tiny toast layers fig, cheese, and a gloss of Madeira reduction to evoke Washington's preferred after-dinner mood: generous, refined, and unmistakably Atlantic-world Virginia.
