This bite is dressed for that parade: a rich foie-gras-and-fig bonbon, gilded in edible gold, unapologetically showy. It is the taste of old New York glamour, when arriving was a performance and the corridor was the stage.
Ingredients
- Foie gras
- Black mission figs
- Port wine
- Brioche crumb
- Edible gold leaf
- Sea salt
- Sauternes
Preparation
- 1.Reduce figs in port; fold into smooth foie gras mousse.
- 2.Chill and roll into one-inch bonbons, coat in brioche crumb.
- 3.Apply edible gold leaf to each.
- 4.Finish with a flake of sea salt; serve with a thimble of Sauternes.
