The Story
Attias resisted the idea of building a festival. Festivals arrive, consume attention, and disappear. Bridge was conceived as a city. A city has values, rhythms, recurring faces, and shared memory. Life does not happen only during ceremonies — it happens in between. This architectural terrine — complex layers visible in cross-section, each distinct but structurally dependent on the others — is a city built bite by bite.

- Gelatin

- Mini croutons
- Fig compote
Preparation
- 1.Shred duck confit and fold with chopped pistachios and cognac.
- 2.Layer with fig compote in a terrine mold, set with gelatin.
- 3.Chill overnight, slice into thin portions.
- 4.Serve atop toasted croutons with a dot of fig compote.
