    O'Dwyer had three roads: start from nothing, acquire an existing business, or join something already in motion. He moved toward acquiring a mental health company — meaningful, adjacent, seductive. Then he stopped. The business satisfied a narrative about who he might want to be, but not the underlying pattern of how he actually operates. This golden arancini with a molten center is that moment of cracking open the obvious choice and finding something different inside.

    Ingredients

    • Arborio rice
    • Gruyère
    • Sage
    • Brown butter
    • Breadcrumbs
    • Parmesan

    Preparation

    1. 1.Cook risotto, cool and form balls around Gruyère cubes.
    2. 2.Bread and deep-fry until golden.
    3. 3.Drizzle with sage brown butter.
    4. 4.Serve immediately while center is still molten.
