The Story
For a month each summer, the Icelandic sun refuses to set. Skies stay rose-gold at midnight. This champagne cocktail is that light, poured — dark crowberry syrup catching the bubbles into a warm sunset color, lemon zest for the salt of the coast, rosemary for the wild highland herb. A toast for the room, the season, and the country that gave both to the world.

- 4 oz brut champagne or Icelandic sparkling wine
- 0.5 oz crowberry syrup (or wild blueberry syrup as substitute)
- Wide lemon twist
- Small rosemary sprig
Preparation
- 1.Pour crowberry syrup into a chilled flute.
- 2.Top slowly with champagne.
- 3.Express the lemon twist over the glass, drop it in.
- 4.Rest a small rosemary sprig across the rim.
