There is a specific smell to Reykjavík in winter — cold sea, birch, a coin of citrus on the wind off the harbor. This cocktail is that smell. Icelandic gin distilled with Arctic botanicals meets tart orange sea buckthorn and a splash of birch water — a landscape you can hold to your face.

Ingredients
- 2 oz Icelandic gin (Vor, Himbrimi, or a botanical-forward substitute)
- 0.5 oz sea buckthorn juice or syrup
- 0.25 oz birch syrup
- Chilled tonic water
- Birch twig and 3 sea buckthorn berries for garnish
Preparation
- 1.Fill a tall glass with clear ice.
- 2.Add gin, sea buckthorn, and birch syrup; stir once.
- 3.Top with chilled tonic.
- 4.Garnish with a small birch twig and three orange berries.
