This cocktail meets it there: a French 75 built on cognac instead of gin — Parisian, art-collector elegant, with a bittered sugar cube that dissolves like a brushstroke. It's the toast you raise when the work finally belongs in the museum.

    Ingredients

    • 1.5 oz cognac
    • 0.5 oz lemon juice
    • 0.25 oz simple syrup
    • 3 oz Champagne
    • 1 sugar cube
    • Angostura bitters
    • Lemon twist

    Preparation

    1. 1.Shake cognac, lemon, and syrup with ice.
    2. 2.Strain into a flute over a bitters-soaked sugar cube.
    3. 3.Top slowly with Champagne.
    4. 4.Garnish with a lemon twist.
