The Story
Jacob's clearest framing of the next decade is structural. The barbell. Heavy on either end, thin in the middle, no associate-director layer to defend. This bite is the architecture in food form: a pearl of smoked trout at one end, a dense rye toast at the other, joined by the thinnest possible slick of horseradish crème fraîche. The two ends carry the meaning. The middle does only what is necessary to hold them together.

- Smoked trout
- Rye toast (cut into 1" cubes)
- Horseradish crème fraîche
- Dill
- Lemon
Preparation
- 1.Form 1" pearls of smoked trout.
- 2.Toast rye into matching 1" cubes.
- 3.Join trout to rye with the thinnest possible smear of horseradish crème fraîche.
- 4.Finish with dill and a squeeze of lemon.
