- 6 oz prime beef tenderloin (hand-chopped)
- 1 tsp Dijon
- 1 egg yolk
- Brioche (cut into 1" toasts)
- Horseradish cream
- 12 capers
- Chives
Preparation
- 1.Toss tartare with Dijon and yolk; press into 1" cubes.
- 2.Toast brioche cubes to match.
- 3.Place tartare on brioche, pipe a dot of horseradish cream.
- 4.Crown each with a single caper and a snip of chive.
