    The Story

    At fourteen, in a small town in the heel of Italy, the introverted boy the cool kids would not stand near rented a venue, hired a DJ, and opened the doors. They came inside because he had decided where it would be and when it would start. This single inch of Apulian focaccia — burrata for the softness he never lost, sun-dried tomato for the heat of the south, basil oil for the place that made him — is that first gathering, the night he learned the only thing about commerce he would ever really need to know.

    Ingredients

    • Focaccia (cut into 1" squares)
    • Burrata
    • Sun-dried tomato
    • Fresh basil
    • Extra virgin olive oil
    • Flaky salt

    Preparation

    1. 1.Cut focaccia into 1" squares and toast lightly.
    2. 2.Top each with a small spoon of burrata.
    3. 3.Add a sliver of sun-dried tomato.
    4. 4.Finish with basil oil and flaky salt.
