The Story
Two weeks into the meetings business, twenty-two and knowing nothing, Matt was handed the rookie's assignment — set up the booth — and drew the worst spot in the hall, small and off to the side where no stranger would slow down. He spent two decades answering the question that day planted: what makes a person in a crowded room walk toward you instead of past you. This single inch of seared steak on a crisp crostini, set deliberately off-center, is that first booth — humble placement, undeniable substance, the thing you walk across a room to reach.
Ingredients
- Beef tenderloin
- Baguette (cut into 1" rounds)
- Horseradish cream
- Chives
- Flaky salt
- Cracked pepper
Preparation
- 1.Sear tenderloin rare, rest and slice thin.
- 2.Toast 1" baguette rounds and spread horseradish cream.
- 3.Drape a fold of steak slightly off-center on each.
- 4.Finish with chives, flaky salt, and cracked pepper.
