    The Story

    On his first day at the agency in 1998, Colja decided he was not there to tell people how to do their jobs — he was there to make it possible for them to do their jobs without anyone telling them how. He named the philosophy decentralized context management: the person in front of the customer must have the authority to decide in real time, because the moment they refer up the chain, the experience has already degraded. This gougère, baked light and filled with mushroom duxelles, is that principle in a single bite — entirely self-contained, carrying everything the moment needs, requiring no one above it to act.

    Ingredients

    • Choux pastry
    • Gruyère
    • Cremini mushrooms
    • Shallot
    • Thyme
    • Cream

    Preparation

    1. 1.Pipe and bake 1" gougères with gruyère until puffed and hollow.
    2. 2.Sauté mushrooms with shallot and thyme into a fine duxelles.
    3. 3.Bind with a touch of cream and cool.
    4. 4.Fill each gougère through the base so the filling is sealed inside.
