The Story
Before Colja Dams had language for what a gathering was, he was a child dusting slides with a compressed-air gun at his father's conventions, keeping the sequence with care because the sequence mattered. Volkwart's Kodak Soft Edge system filled convention halls with composite images at a scale that rivaled Hollywood, and Colja learned at ten that whether the image appeared correctly was never trivial. This crisp parmesan tuile, layered with whipped ricotta and fig in deliberate sequence and dusted clean at the edge, is that first apprenticeship made edible: precise, composite, and assembled in exactly the right order.
Ingredients
- Parmesan (for tuiles)
- Whipped ricotta
- Fig
- Honey
- Cracked pepper
- Microgreens
Preparation
- 1.Bake parmesan into crisp 1" tuiles.
- 2.Pipe a layer of whipped ricotta on each.
- 3.Top with a thin slice of fig and a drizzle of honey.
- 4.Dust the edge clean and finish with cracked pepper and a microgreen.
