
Six in the Morning
A 1" egg and cheese on a kaiser roll, wrapped in foil and served on fine porcelain with the permit tucked underneath
"It's one thing to spit it into AI and it comes out. We are going to produce it. Our mantra here is whatever it takes, make it happen." Someone still has to be on the sidewalk at six in the morning with the mayor's office permit in hand before the cones go out.
Why this bite? The plan is free; the six a.m. sidewalk isn't. A bodega breakfast, plated like the product it is.
The Story
A client asked whether she could cut costs by putting fewer staff on site, and her answer was no, not without losing the thing being bought: the advance crew loading in before dawn, the person holding the signage, the permit already filed so a street can legally be blocked. This is what that crew eats. Cut to an inch, still in its foil, plated on china — because the glamour is downstream of the sidewalk.

- Mini kaiser rolls (1")
- Egg
- American cheese
- Black pepper
- Butter
- Foil squares
Preparation
- 1.Cut mini kaiser rolls to 1" and split, butter lightly and toast.
- 2.Fold a small omelet and cut to size.
- 3.Layer egg and cheese inside, press until the cheese pulls.
- 4.Half-wrap each in foil and set on porcelain.
