The Story

- Heirloom tomato water (clarified)
- Agar or gelatin
- Compressed cucumber
- Basil oil
- Flaky salt
Preparation
- 1.Clarify tomato water until crystal clear.
- 2.Set with agar in a 1" tray and chill.
- 3.Compress cucumber batons and cut to 1" bases.
- 4.Set a clear cube on each cucumber base; finish with basil oil and salt.
