The Story
He had already burned a year publishing the bad news — no Easter reopening, no quick return, only hopium — so when the reassuring number finally arrived, the room took it seriously. - Citrus-cured salmon
- Rye crisp (1" rounds)
- Crème fraîche
- Dill
- Cracked pepper
Preparation
- 1.Cure salmon with citrus and salt; cut into 1" cubes.
- 2.Cut rye crisps into 1" rounds.
- 3.Dot with crème fraîche and set the salmon cube on top.
- 4.Cover with a small cloche and lift at the table — filtered air, then flavor.
