    The Story

    On a Tuesday in May of 2020, Howard Givner received the stem cell transplant that saved his life — on the same Tuesday the events industry he had spent twenty-five years building effectively closed for business. Six years later, both are still standing. He calls the anniversary his rebirth day. He observes it. This bite is what comes out the other side: clean salmon, sharp horseradish, a single dill frond — gratitude as the operating system, the clarity that decides which conversations are worth being in.

    Ingredients

    • Beet-cured salmon (cut into 1" cubes)
    • Dark rye (1" squares)
    • Horseradish crème fraîche
    • Fresh dill
    • Lemon zest
    • Cracked pepper

    Preparation

    1. 1.Cure salmon with beet juice, salt, sugar; press 24 hrs.
    2. 2.Cut salmon and rye into matching 1" cubes.
    3. 3.Pipe a coin of horseradish crème onto each rye square.
    4. 4.Cap with salmon, finish with a single dill frond and lemon zest.
