    The Sand Gravity

Citrus ceviche in sand-colored ceramic with avocado & edible flowers

No single festival moves revenue. But it moves gravity.

Why this bite? Lee says festivals move gravity, not revenue. This ceviche — bright, place-bound — carries South Beach in every bite.

    The Story

Schrager understood that festivals don't move revenue directly — they move gravity. South Beach became part of Miami's emotional infrastructure alongside Art Basel. This citrus ceviche, served in a sand-colored ceramic, captures that gravitational pull: bright, seasonal, and tied to a specific place so completely that the taste carries the geography.
