- Beef tenderloin (1" coins)
- Horseradish crème fraîche
- Crostini (1" rounds)
- Chive
- Cracked pepper
- Maldon salt
Preparation
- 1.Sear 1" tenderloin coins to medium-rare and rest.
- 2.Whip crème fraîche with horseradish.
- 3.Set each coin on a 1" crostini with a dollop of horseradish cream.
- 4.Finish with chive, cracked pepper, and Maldon — placed dead center.
