    The Story

    The promise he is actually selling is consistency: an overworked organizer, a freelance labor market, and no way of knowing who will walk into the ballroom to run the show. So the drink has to be the same the four hundredth time as the first — a spec simple enough to survive a stranger's hands, bright enough that nobody in any of those rooms sends it back, with a salted rim that says somebody paid attention to the edge.

    Ingredients

    • 1.5 oz mezcal
    • 1 oz pineapple juice
    • 0.5 oz lime juice
    • 0.25 oz agave
    • 2 oz soda water
    • Chili salt rim

    Preparation

    1. 1.Rim a highball with chili salt.
    2. 2.Shake mezcal, pineapple, lime and agave with ice.
    3. 3.Strain into the glass over fresh ice.
    4. 4.Top with soda and garnish with a lime wheel.
