The Story
Welsh's Towson coach taught him the only test that mattered, and he has run it under every job since — ramp, hotel, casino, three DMOs, one global association. This old fashioned is that test in a glass: nothing hidden, nothing rushed, poured over a single clear block so the drink and the drinker see each other honestly.

Ingredients
- 2 oz bourbon
- 0.25 oz demerara syrup
- 2 dashes Angostura bitters
- Large clear ice cube
- Orange peel
Preparation
- 1.Stir bourbon, demerara, and bitters over ice until cold.
- 2.Strain over one large clear cube.
- 3.Express an orange peel over the top and drop in.
- 4.Set on a polished surface — nothing to hide.
