This champagne cocktail is the same move — a humble sugar cube and bitters on the bottom, lifted by champagne and topped with a quiet float of cognac so the first thing you taste is the heritage on top. - 3 dashes Angostura bitters
- 4 oz Champagne
- 0.25 oz cognac (float)
- Lemon twist
Preparation
- 1.Place sugar cube in a flute, soak with bitters.
- 2.Top slowly with Champagne.
- 3.Float cognac across the back of a spoon.
- 4.Express lemon twist over the surface.
