The Story
Betsy Ross, the Philadelphia seamstress credited with sewing the first American flag, represents the spirit of craftsmanship and patriotism at the heart of the nation's founding. Whether or not the famous flag story is entirely true, Ross was a real upholsterer and businesswoman who contributed to the Revolution. These star-shaped puff pastries — hand-cut and filled with spinach and gruyère — are a delicious homage to her artistry, precision, and American pride.

Ingredients
- 1 sheet puff pastry
- 2 cups fresh spinach
- 4 oz gruyère cheese
- 1 egg
- Nutmeg
- Salt & pepper
Preparation
- 1.Wilt spinach and squeeze dry, mix with grated gruyère.
- 2.Roll puff pastry and cut into star shapes.
- 3.Place spinach mixture on half the stars, top with remaining.
- 4.Egg wash and bake at 400°F until golden, about 15 minutes.
