The Story
Fresh out of college, Dahlia landed a job at a Red Sea resort with a single mandate: 'Make people happy. And make money.' She stole mattress pads off pool loungers, trucked them into the desert under a full moon, and charged tourists $500 a night to sleep under the stars. When diving tours were cancelled on New Year's Day, she negotiated with Bedouins to host a camel race. No permits, no deck, no 'event bible.' Just intuition, empathy, and storytelling. This spiced lamb kofta — born of desert tradition and improvised brilliance — is her origin story on a skewer.

- 1 lb ground lamb
- Cumin, coriander, cinnamon
- Medjool dates
- Greek yogurt
- Pomegranate seeds
- Fresh mint
- Bamboo skewers
Preparation
- 1.Mix lamb with cumin, coriander, cinnamon and form onto skewers.
- 2.Grill kofta until charred and cooked through.
- 3.Blend dates with a splash of vinegar to make chutney.
- 4.Plate with yogurt drizzle, pomegranate seeds, and mint.
