The Story
Femi Oke treats the audience not as spectators but as the most important participant in the room. 'If you've got three panelists, the audience is the fourth panelist. You've got five panelists, they're the sixth. They're as important as somebody who's on the stage.' She watches for the lean forward, the turn to a neighbor, the scribbled note. This bruschetta — open-faced, welcoming, topped with flowers that invite you to take a closer look — is for the person in the third row who had the best idea all day and just needed someone to ask for it.

Preparation
- 1.Toast sourdough slices until golden and crisp.
- 2.Whip ricotta with a pinch of salt until cloud-light.
- 3.Spread generously on toast.
- 4.Drizzle with honey, crack pepper, scatter edible flowers and flaky salt.
