The Story
Before Femi Oke ever set foot in a studio, she was already a broadcaster. At eight years old, she spent each week collecting news from family members and presenting a ten-minute broadcast she called the Oke Bulletin, delivered over her mother's Jollof rice. No one in the family had a media background. The whole enterprise was self-generated, powered by what Oke describes as 'enthusiasm and bounciness.' This Nigerian-inspired jollof rice cake captures that origin story — bold spice, bright garnish, and a foundation built from scratch.

- 2 cups jollof rice (cooled)
- 2 ripe plantains
- Suya spice blend
- Micro cilantro
- Scotch bonnet aioli
- Ring mold
Preparation
- 1.Press cooled jollof rice into a ring mold to form compact cakes.
- 2.Slice plantains thin, toss with suya spice, and fry until crisp.
- 3.Unmold rice cakes onto slate.
- 4.Top each with a plantain chip, dot of scotch bonnet aioli, and micro cilantro.
