This bite is engineered to raise one: cold on the tongue first, then a slow chili heat climbing the back of the neck, then salt, so the body reacts before the mind has time to deliberate.

- 70% dark chocolate
- Heavy cream
- Ancho and árbol chili
- Smoked Maldon salt
- Cocoa nib dust
Preparation
- 1.Infuse warm cream with ancho and árbol chili; strain.
- 2.Emulsify into melted dark chocolate; set in a 1" tray and chill.
- 3.Cut into clean 1" cubes.
- 4.Dust with cocoa nib and finish with smoked salt — cold first, heat second.
