Beirut, the French lycée, Sunday lunches that were really business conversations you were allowed to absorb — each layer stacked another way of reading people onto the last. This bite is that stacking: a Levantine base, a cultivated middle, a sweetness on top that only makes sense because of everything underneath it.

- Za'atar shortbread (1" rounds)
- Labneh
- Black mission fig
- Orange blossom honey
- Toasted pistachio
Preparation
- 1.Bake za'atar shortbread and cut into 1" rounds.
- 2.Pipe a small dome of labneh onto each.
- 3.Top with a sliver of black mission fig.
- 4.Finish with orange blossom honey and crushed pistachio.
