- Brown butter
- Lemon
- Chive
- Sea salt
Preparation
- 1.Trim scallops into 1" coins and dry thoroughly.
- 2.Sear in foaming brown butter, 20 seconds per side.
- 3.Spoon brown butter and lemon over each coin.
- 4.Finish with chive and sea salt — nothing to hide behind.
