This bite is engineered around that idea — a cold, calm center resting on something hot and assertive, so the guest tastes both at once and cannot tell you which one is in charge.

- Cucumber-yogurt set cubes (1")
- Smoked paprika almond crisps
- Dill oil
- Lemon zest
- Sea salt
Preparation
- 1.Set thick strained yogurt with grated cucumber and gelatin; cut into 1" cubes and chill hard.
- 2.Toast almond-flour crisps with smoked paprika and hold warm.
- 3.Place a cold cube on each warm crisp just before service.
- 4.Finish with dill oil, lemon zest and salt.
