After Hours at the Castle
A one-inch aged Isle of Mull cheddar crumble with whisky marmalade and a gold-leaf fleck
For the private nightcap inside Edinburgh Castle after the last tour has left
Why this bite? Scotland trades in exclusive access. Aged cheddar with whisky marmalade and gold — the after-hours moment, edible.
The Story
The most Scottish moment is the one after everyone else has gone home. This bite is that private nightcap: crumbled aged Isle of Mull cheddar and toasted oats pressed into a coin, glossed with a bead of whisky-orange marmalade and finished with a single flake of edible gold. It's exclusive access on a spoon — the reason planners choose Scotland for the moments the badge doesn't cover.
