The Story
Before the singing and the streets, there was the land. This bite is the Highlands compressed to a cube: hand-cut venison tartare bound with juniper and a whisper of heather honey, dressed in foraged herbs from a Cairngorm hillside. It's the quiet half of the Tartan Army's story — the wildness underneath the celebration.
Ingredients
- Wild venison loin
- Juniper berries
- Heather honey
- Whisky
- Shallot
- Foraged wood sorrel
- Sea salt
Preparation
- 1.Hand-dice venison to fine cubes; season with juniper, shallot, salt.
- 2.Bind with a drop of whisky and heather honey.
- 3.Press into one-inch cubes on chilled slate.
- 4.Crown with foraged sorrel and micro-herbs.
