The Baja fish taco, which migrated north from Mexico's Pacific coast, found its California home here: crispy beer-battered fish, creamy lime sauce, and bright tropical salsa. This wonton-shell version captures that barefoot, boardwalk energy in a single, sunshine-filled bite.

    Ingredients

    • 8 oz white fish fillets
    • Wonton wrappers
    • Mango, diced
    • Red pepper, diced
    • Cilantro
    • Lime crema (sour cream, lime, garlic)
    • Oil for frying

    Preparation

    1. 1.Fry wonton wrappers in cups, drain on paper towels.
    2. 2.Season and pan-sear fish until flaky, break into chunks.
    3. 3.Toss mango with red pepper and cilantro for salsa.
