Why this cocktail? Yerba mate is Argentina's gathering ritual already in liquid form. Add rum and lime and you get Buenos Aires, 1993, in a glass.
The Story
The bartender's version of the room Marco Giberti walked into at twenty-five. Aged white rum for the Latin American backbone, yerba mate for the Argentine pulse, lime for the bright moment of recognition when strangers see each other across a floor. One sip, two notes — because that's all a well-sorted room needs to land.

Ingredients
- 1.5 oz aged white rum
- 0.75 oz fresh lime juice
- 0.5 oz yerba mate syrup (steeped + sugared)
- Lime peel
- Single large ice sphere
Preparation
- 1.Steep yerba mate in hot water 5 minutes; sweeten 1:1 with sugar; cool.
- 2.Shake rum, lime, and mate syrup with ice.
- 3.Strain into a coupe over a single ice sphere.
- 4.Express lime peel and rest on the rim.
