The Story
The Sun Yen kitchen in Tarpon Springs gave Colja his English and something he still names decades later: China speed — the efficiency, the positive agenda, the total commitment to quality and service of people who built something from nothing and made it excellent every day without drama. Twenty-two years later VOK DAMS opened in Beijing, and now has five Chinese offices. This baijiu-and-ginger highball is that velocity in a glass: built fast, served immediately, bright and exact — nothing wasted, every element pulling its weight.
Ingredients
- 2 oz light baijiu
- 0.5 oz lime juice
- 0.5 oz ginger syrup
- 3 oz soda water
- Candied ginger
- Lime wheel
Preparation
- 1.Build baijiu, lime, and ginger syrup over ice in a highball.
- 2.Top with soda and stir once.
- 3.Garnish with candied ginger and a lime wheel.
- 4.Serve the instant it's poured.
