    Why this cocktail? The unsimulated room is the last real thing. This analog, tableside-built old fashioned can't be faked or generated.

    The Story

    Colja's term for the current condition arrived mid-conversation and became his next keynote on the spot: we already live in a simulation. Everything is increasingly synthetic — except the room where people are actually present, where what happens between them is not generated or optimized by a model. That room is what VOK DAMS sells, and it has never been worth more. This old fashioned is built deliberately analog: stirred tableside, in front of you, with nothing about it approximated — the genuine, unmediated thing the most powerful technology in the world cannot produce.

    Ingredients

    • 2 oz bourbon
    • 1 sugar cube
    • 3 dashes Angostura bitters
    • Orange peel
    • Large hand-cut ice cube

    Preparation

    1. 1.Saturate a sugar cube with bitters in the glass and muddle.
    2. 2.Add bourbon and a large hand-cut cube, stir slowly tableside.
    3. 3.Express an orange peel over the surface.
    4. 4.Drop the peel in — no other garnish.
