The Story
Eighty-nine years of a family business is not a plaque on a wall; it is five living generations with different expectations of the same company, which is also true of the four or five generations working inside it. This drink is poured in strata — aged oloroso at the base, Cognac above it, a bright young apple cordial on top — so you taste the whole lineage in a single sip.

- 1 oz aged oloroso sherry
- 1 oz Cognac
- 0.5 oz green apple cordial
- 1 dash aromatic bitters
- Apple fan
Preparation
- 1.Pour chilled oloroso into a small stemmed glass.
- 2.Layer Cognac gently over the back of a spoon.
- 3.Float the apple cordial on top.
- 4.Add a dash of bitters and garnish with a thin apple fan.
