    The Story

    Welsh arrived at a broken organization in March 2016 and, instead of announcing a plan, went on the road for two hundred conversations. What do you want, what do you need, what will you support — asked in person, everywhere, until the answers turned into four pillars and a new name. His colleague Chelsea posted the schedule and called it what it was: the Apology Tour. This bite is that trip: a working-class crab cake, unpretentious, served open-faced with nothing to hide behind, because you cannot rebuild trust with a slide deck.

    Ingredients

    • Blue crab meat
    • Panko
    • Old Bay
    • Egg
    • Rye bread (1" rounds)
    • Rémoulade
    • Chive

    Preparation

    1. 1.Bind crab with panko, egg, and Old Bay; form 1" cakes.
    2. 2.Sear until golden on both sides.
    3. 3.Set each cake open-faced on a 1" rye round with rémoulade.
    4. 4.Finish with a chive tip — nothing to hide behind.
