Long before Don Welsh rebuilt the oldest association in the gathering economy, a Towson coach named Phil Albert taught him the only test that mattered: you gave your all, or you didn't, and the mirror will tell you which. Welsh has run the sentence under everything he has done for half a century — average intelligence, inexhaustible effort, no shying away. - Beef filet (1" coins)
- Cracked black pepper
- Fresh thyme
- Maldon salt
- Grapeseed oil
Preparation
- 1.Season 1" filet coins heavily with cracked pepper and salt.
- 2.Sear hot in grapeseed oil, 45 seconds per side; rest.
- 3.Place each coin on a mirror-polished spoon.
- 4.Finish with a thyme sprig — nothing to hide.
