The Story
The official biography starts in mid-air. The real one starts on the ramp. Welsh's brother worked United at BWI, and free passes turned a Baltimore kid into a passenger before he was a teenager; the ramp job followed, and then a ticket counter at O'Hare, where he met a flight attendant named Jean. Every seat in the gathering economy he would eventually hold — airline, hotel, casino, destination, association — is stacked on top of that first shift under a plane. This bite is that origin: a shortbread tag with a rolled smoked salmon and one caper, humble cargo elevated by exactly how carefully it's handled.

- Shortbread crackers (cut into 1" luggage-tag shapes)
- Smoked salmon
- Capers
- Crème fraîche
- Dill
- Lemon zest
Preparation
- 1.Cut shortbread crackers into small luggage-tag rectangles.
- 2.Pipe a dot of crème fraîche onto each.
- 3.Roll a ribbon of smoked salmon and set on top.
- 4.Finish with a caper, a dill frond, and lemon zest.
