A 1" guava-and-cheese pastelito that arrives on a moving track, kitchen hidden behind the backdrop
At Cannes Lions this summer BMF seated forty CEOs around a custom dining table with a conveyor track running down its spine, hid the kitchen behind the backdrop, and let each course arrive as theater. It was one of fifteen events the agency ran on the Croisette that week, in its tenth consecutive year there.
Why this bite? Forty CEOs, one conveyor belt, a hidden kitchen. What arrives matters less than how it arrives.
The Story
Cannes is the one event where the boss actually shows up — the CMO walks the villa, sits at the belt, and watches their own brand perform in front of the only peers whose opinion matters. So the client isn't a company, it's a person standing right there hoping to look brilliant. The bite is cut to an inch so it can be eaten in the two chews between one arrival and the next, and the delivery, not the pastry, is what's being sold.

- Puff pastry sheets
- Guava paste
- Cream cheese
- Egg wash
- Turbinado sugar
- Lime zest
Preparation
- 1.Cut puff pastry into 1" squares and chill.
- 2.Center a small cube of guava paste and a bead of cream cheese on half of them.
- 3.Cap, seal the edges, brush with egg wash and dust with turbinado.
- 4.Bake at 400°F until deep gold; send them out one at a time, moving.
