Brewster describes the trade show floor as a superhighway of opinions: one exhibitor says brilliant, the next says they missed the level, a buyer says no value, another says transformative. Perception is built by whoever you talked to at the coffee station. This 1-inch tartare cube is the gossip fest in food form — bright tuna, cool avocado, sweet mango, sharp chili — four contradicting opinions stacked into a single bite.

- Sushi-grade tuna
- Ripe avocado
- Mango
- Fresno chili
- Lime
- Soy
- Sesame oil
- Black sesame seeds
Preparation
- 1.Dice tuna and dress with soy, sesame oil, lime.
- 2.Mash avocado with lime and salt.
- 3.Brunoise mango and chili.
- 4.Layer in a 1" ring mold: avocado, mango-chili, tuna; top with sesame seeds.
