Brewster's inversion: the metric comes first, then you design the event to achieve it. Before the inaugural ELX Congress in Chicago he wrote the survey, sent it to leadership, and built the program from the outcomes they wanted to land. This bite is the same discipline — every component decided before the knife touched the board, the salmon cured to the exact dimensions the architecture required.

- Beet-cured salmon (cut into 1" cubes)
- Dark rye (1" squares)
- Horseradish crème fraîche
- Fresh dill
- Lemon zest
- Cracked pepper
Preparation
- 1.Cure salmon with beet juice, salt, sugar; press 24 hrs.
- 2.Cut salmon and rye into matching 1" cubes.
- 3.Pipe a coin of horseradish crème onto each rye square.
- 4.Cap with salmon, finish with a single dill frond and lemon zest.
