    The Story

    The frontier she is most animated about is temporary infrastructure: a stadium raised in a Toronto parking lot, a pier turned conference hall, a city block turned festival site, none of it required to exist until the crews arrive. This bite makes the same argument on a plate — no cracker, no cup, no tart shell, no walls of any kind. It stands up because it was engineered to, and then it's gone.

    Ingredients

    • Roasted beet, pressed
    • Whipped goat cheese
    • Agar for setting
    • Toasted pistachio dust
    • Micro basil

    Preparation

    1. 1.Blend roasted beet with a touch of agar; set in a 1" deep tray.
    2. 2.Cut into free-standing 1" cubes.
    3. 3.Pipe a small dome of whipped goat cheese on top.
    4. 4.Dust with pistachio and finish with micro basil; serve with no base.
