The Next Edition
A 1-inch apple-and-almond pastry with fine page-like layers and a citrus-peel bookmark — the book you can taste
Exhibit Smarter ships September 29, with launch week through October 5. Its golden rule: exhibiting is iterative, not repeated.
Why this bite? Her new book says the next show should be an improved edition, never a reprint of the last.
The Story

After seventeen years diagnosing the same avoidable mistakes, Robyn put the framework in a book. Exhibit Smarter turns a show from a one-off expense into a process: pick a goal, prepare the people, learn what happened and take that learning to the next floor. Apple and almond recur in every layer of this tiny pastry, but each layer adds texture. The citrus bookmark marks where to begin again, a little further along than last time.
Ingredients
- Puff pastry
- 2 crisp green apples
- 3 tbsp almond butter
- 2 tbsp apricot glaze
- 1 orange peel
- Toasted sliced almonds
Preparation
- 1.Bake puff pastry between trays until flat, crisp and golden.
- 2.Cut pastry into one-inch squares; slice apples wafer thin and toss with a little orange juice.
- 3.Layer pastry, a thin smear of almond butter and apple twice, keeping the finished stack within a one-inch cube.
- 4.Brush with apricot glaze, top with sliced almonds and tuck a narrow citrus peel between layers like a bookmark.
