The Load-Bearing Step
A 1-inch crisp polenta square with roasted mushroom, herb cream and chive — every layer doing its job
Aerospace engineering is her operating system: problem-solving with structure, staff training before the show and evaluation afterward.
Why this bite? Her engineering background makes the unseen steps as important as the visible result.
The Story

Robyn says engineering taught her to solve problems creatively within a structure. Her exhibit program has load-bearing steps: goals, individual staff onboarding, a quiz on the company's own facts and the review after the floor closes. Here the polenta carries the mushrooms, the cream holds the finish and the chive marks the line. Skip the foundation and the bite collapses, just as a beautiful booth cannot hold up an unprepared team.
