- Citrus-cured salmon
- Dark rye (cut to 1" coins)
- Dill crème fraîche
- Capers
- Lemon zest
- Cracked white pepper
Preparation
- 1.Cure the salmon in citrus and salt, then cube to a strict 1".
- 2.Toast rye coins until dry at the edge.
- 3.Spoon dill crème onto each coin and set the cube on top.
- 4.Finish with one caper, lemon zest and white pepper.
